Bran-Apple Pancakes

Surprise!  I’m going to let the cat out of the bag and tell you all about my third cookbook (which will somehow be my first book released).  It is a pioneer recipe cookbook, filled with all kinds of old-time historical dishes.  I’m not sure what my publisher is going to name it (they’re not sure yet and no, I am not in charge of the name), but the last possible name I heard was Pioneer Log Cabin Cookbook.  My idea was to name it Pioneer Recipes For A Modern Kitchen.  What would you like to see it named?
Anyway, while I was writing this pioneer cookbook and experimenting with recipes I had to become very familiar with bran for one particular chapter.  During this phase of the book, for dinner one night, I decided to make some type of bran pancakes but when I started that thought and kept going with it I had no idea how very delicious it was going to be.  These are, not exaggerating, some of the tastiest pancakes I have eaten.  In fact, I couldn’t stop eating them, I would finish my plate and still want more (I think I finally stopped myself after 3 helpings). These pancakes are “to die for!!”
Bran-Apple Pancakes
Serve these however you usually like to eat pancakes.  I eat them with fresh berries, whipped cream, and 100% maple syrup.
2 eggs
½ cup flour (all-purpose or whole wheat)
½ cup wheat bran
½ cup milk
½ cup applesauce
2 tablespoons brown sugar
2 tablespoons canola oil
2 teaspoons baking powder
1 teaspoon vanilla
½ teaspoon sea salt
½ cup apple small apple chunks
Heat a large skillet to medium or griddle to 300.  In a large mixing bowl beat the eggs then whisk in the remaining ingredients (except the apple chunks), stirring until the batter is very smooth.  Lastly fold in the apple chunks.
Lightly butter the hot pan or griddle.  Scoop about 1/3 cup batter per desired pancake onto the hot surface.  When each cake becomes bubbly flip it over, cooking the pancakes about 3-4 minutes on each side.

To me, it says more than old-time historical dishes. It has a definite theme, which is very attractive to consumers. Best of luck!

  12. These pancakes look wonderful! I really like Pioneer Recipes for a Modern Kitchen. I have inherited some very old cookbooks and the directions are antiquated to the point of almost being unuseable. You want your title to convey the fact that your recipes are based on old fashioned (real) ingredients while making sure that potential buyers understand that they will be able to actually use your book as a cookbook. I hope that makes sense. :)

  13. I really like Pioneer Recipes for a Modern Kitchen...I feel like the other title sounds too blah whereas this one makes me want to get in the kitchen with it!

    These bran apple pancakes sound delicious! What a great way to start the day!

  25. Hi Miriam! What wonderful news about your cookbook! I really love traditional frontier cooking and love going out west and visiting local spots where they still make things the old fashioned way. I think the log cabin name makes me think of log cabin syrup and I like the modern kitchen idea much better. These flapjacks look lovely!
